Cooked these up for myself tonight, using directions I found online. Might have been better on charcoal, but was too lazy. I did use some smoking chips on the gas grill though, which worked out nicely. Here's the original directions:

Basically cooked over indirect heat, "low and slow" for 60-90 minutes. Only flipped every 30 mins. Last 10 minutes, slathered on the BBQ (dinosaur brand - you could go homemade if you are more motivated than I - some recipes as link above) and move to direct heat to finish and get some char. A couple of them, I didn't BBQ and just used some montreal chicken marinade...
